Art Workshop International, a summer program featuring creative classes on art, writing, language, photography, and food, celebrates its 35th year this year. This summer, join Chef Pippa Calland, owner of MidSt8 Taco, for a unique weeklong workshop where you can both sharpen your cooking skills and delve into the world of Italian cuisine.

A Taste of Umbria with Pippa Calland

This workshop offers an in-depth immersion in the finer aspects of Umbrian cooking. With Chef Pippa Calland as your guide you will be introduced to all aspects of the region’s cuisine. The region’s famous ingredients including truffles, olive oil, and wines are used to make dishes that both delight the palette and please the eye. Included in the workshop are trips to Trevi, Umbria’s olive oil capital; Norcia, home of the black truffle; a tour to a winery, an ingredient-shopping excursion to Bastia, and a class in making chocolate at the Perugina chocolate factory.
Pippa Calland’s extraordinary food, deep knowledge of culinary techniques and passion for her field has shown in her restaurants, consulting, and many television appearances.
Restaurateur Pino Luongo described her cooking as “the closest thing to Tuscan soul food,” and hired her as the first American born executive chef to helm his Le Madri where The New York Times praised her “evolved-Italian approach that combined respect for Italian traditions with an international sensibility.” In 2002 Esquire magazine named her one of “Thirteen Chefs to Look Out For.”
In 2009 she was a winner of on the Food Network’s Chopped and in 2010 she became the executive chef of Villetta Brentwood. She was named to the Academia Barilla pantheon of Master Chefs of Italian cuisine, and was invited to be part of Nutritaly by the Italian consulate in Los Angeles.
In 2012 Pippa was featured on BBC America’s Chef Race and in 2013 was a finalist on Chef Wanted on the Food Network. Pippa is based in central Pennsylvania where she runs Chef For Hire and opened Midst8 Taco Y Tortilla in 2013.
